LUKE'S COOKBOOK OUT ON 19TH JUNE
As I'm sure you all know, Luke Thomas of Luke's Dining Room at Sanctum on the Green in Cookham Dean became the UK’s youngest head chef aged 18. In Luke’s Cookbook, out on 19th June, he gives 100 classic recipes unexpected twists and turns and presents them in a fresh, modern way.
He told me: 'I am so excited to have written a book - it was a long, fun process of researching old-school British dishes and giving them a modern makeover. In the book, you'll see pretty much everything from my take on cheese and pineapple on sticks [upgraded to crispy goat's cheese balls with pineapple salsa] to calves liver and bacon, and some lovely old-fashioned British desserts like my grandmother's trifle.'
Spaghetti Bolognese also gets a revamp with a Parmesan-herb topping. Sophisticated, delicious and simple to prepare, these recipes offer something different and unusual to serve at the table without departing too far from what we already know.
Luke has said: 'There are no complicated preparation techniques and no ingredients you can't pick up at your regular supermarket. I love to have fun with food and I want to show that cooking and entertaining doesn't have to be a pressure to get right. Eating together should be something to enjoy, not worry about.'
Now just 20, Luke is Chef Patron of several Luke's branded restaurants around the UK and was the creator of Retro Feasts, an exciting six-month pop-up restaurant in London.
